Long before pepper became something you buy in a shaker, it grew here — climbing up trees in Kerala's backyards, the way it has for centuries.

Ours still does. What ends up in the jar is just that vine's harvest, dried and ground, nothing else.

How It's Made

Pepper grows as a climbing vine, and the berries are harvested in clusters once they've matured but before they fully ripen — that's when the flavor and heat are at their strongest.

The clusters are picked by hand, then separated from the stem. From there, the berries are spread out and left to dry in the sun, turning from green to the dark, wrinkled black we recognize as pepper.

Drying takes a few days, and it depends entirely on the weather. No forced heat, no machine dryers. Just sun, air, and patience.

Once fully dried, the peppercorns are ground. That's the only processing step. No mixing with fillers, no husk or stem left in, no added flavoring to make up for anything lost along the way.

What you get is pepper that tastes like where it came from — sharp, earthy, a little smoky from the sun-drying.

Why the Heat Varies Batch to Batch

You might notice one batch of our pepper powder is sharper than the last, or the aroma sits differently.

That's the vine and the season, not an inconsistency. Pepper harvested at slightly different points of maturity, or grown through a different season's rain and sun, carries a different intensity naturally. We don't standardize it to taste the same every time — that would mean adjusting something after the fact, and we don't.

Why We Keep It Simple

Pepper doesn't need much done to it. It's been grown, dried, and ground this way in Kerala for longer than anyone can trace — no factory required to get it right.

Our part is small: pick it at the right time, let the sun do the drying, grind it, and stop there.
